Zucchini Pizza Bites

Ingredients
- 1 pound zucchini medium to large
- ½ cup pizza sauce
- 1 teaspoon oregano
- 2 cups mozzarella shredded
- ¼ cup parmesan cheese shredded
- ½ cup mini pepperoni or chopped pepperoni
- other pizza toppings as desired optional
- fresh basil for garnish optional
Instructions
- Preheat the oven to 450°F.
- Slice the zucchini into ¼-inch thick rounds or if the zucchini is small, slice it lengthwise into ¼-inch strips. Place the zucchini on a rimmed baking sheet.
- Top each slice with pizza sauce and a sprinkle of oregano. Add mozzarella, parmesan cheese, and mini pepperoni.
- Bake for 5 minutes. Remove the zucchini from the oven and turn the oven to broil (high).
- Once the broiler is hot, place the zucchini 4-inches from the broiler and cook for an additional 5 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for a minute or two. Garnish with basil and serve.
Notes
- Do not overcook the zucchini.
- If the toppings have moisture (like mushrooms), cook them before adding to the bites.

excellent recipe. I cut and dried the zucchini for a day. I then put zucchini on baking sheet sprinkled with oregano and granulated garlic. baked for 30 min. at 200.
Then topped with pepperoni and broiled until it began to curl. The marinara, mozzarella, parmesam, more oregano and a slice of cherry tomato.
So delicious.
